Our Story

From a single storefront to a Philadelphia institution — good food, great people, no shortcuts.

The Name

What's an "Ishkabibble"?

The name comes from a Yiddish expression meaning "I should worry?" — a carefree attitude that captures who we are. It was also the catchphrase of Merwyn Bogue, a 1930s big band comedian.

When we opened in 1979, we wanted something fun, memorable, and authentically Philadelphia. Come as you are, eat something great, don't worry about the rest.

That spirit hasn't changed in over four decades.

Our Legacy

We Invented the Chicken Cheesesteak

Before 1979, a chicken cheesesteak didn't exist. We created it — grilling seasoned chicken the same way we did beef.

It became an instant hit. Today every shop in Philly offers one, but there's only one place that started it all.
